And, I’m loving tomatoes all the more these days after reading that my favorite fruit (yep, tomatoes are fruits, not vegetables) have been linked to a decreased risk of skin cancer.
Research published in Scientific Reports found that consuming tomatoes decreases skin cancer tumor growth. Apparently, the pigmented dietary carotenoids in tomatoes can help protect against UV light. Lycopene, the primary carotenoid in tomatoes, has shown to be a powerful antioxidant. Researchers found that whole food tomatoes were more effective in preventing redness after UV exposure than synthesized lycopene supplements.
